Mushroom and cheese stuffed chilli peppers


INGREDIENTS

Mushroom and cheese stuffed chilli peppers
Water
3 large red chillies sliced lengthwise into 2 halves deseeded and white membrane removed
2 tsp. oil
1/2 cup finely chopped spring onions

2 cloves garlic, minced
1/2 tsp. red chilli powder
2 cups sliced fresh mushrooms
1 cup fresh breadcrumbs

1 cup frozen corn kernels boiled in salted water and drained
3/4 cup grated cheddar cheese
Salt and pepper to taste



METHOD

Mushroom and cheese stuffed chilli peppers
1.Boil water and add red chilli halves to the boiling water.
2.Cook for about 5 mins or until crisp and tender.
3.Drain well and set aside. Heat oil in a pan.
4.Add onions and garlic.
5.Saute for 2-3 mins.

6.Add chilli powder, mushrooms and saute until brown in colour.
7.Add the breadcrumbs, corn and saute until mixture mixture is well browned.
8.Combine the cheese with the mushroom mixture.
9.Add salt and pepper to taste.
10.Stuff the red chilli halves with this mixture.

11.Lightly grease a baking dish.
12.Place the stuffed chillies close to each other in the baking dish.
13.Cover the dish and bake at 350 degrees in a pre-heated oven.
14.Bake for around 15-20 mins. Serves 4.
